We sincerely hope you’re not spending your Mother’s Day grocery shopping, but we know you still have to think about dinner!
We received so many compliments last week on how helpful our week of meal planning was for so many families that we decided to do it again. After all, just like a vacation hangover, you really should get a little time to recover after Mother’s Day too!
As we mentioned last week, we encourage you to put your cookbooks down this week and let us do the planning for you. Below are a list of meals for the week from some of our favorite cookbooks and bloggers that have all been tested and reviewed by some of our toughest critics–our kids. Most of these meals won’t have you standing over a counter chopping and dicing for hours and only need simple sides to compliment them. Our goal is to make meals as easy as possible this week while also surprising your family with some new eats.
And as much as we wish we could jump through the screen and do the grocery shopping for you, we’ve done the next best thing and created a printable grocery list for you too — Aisle by Aisle — Located at the very bottom of this post.

Monday :: Ridiculously Amazing Asian Ramen Salad – Table for Two
{Recipe Approved by Bethany} If you’re in a hurry for dinner this week, definitely give this crunchy salad a try! No baking or cooking required.
Tuesday :: Diner Meatloaf – Taste of Home
{Recipe Approved by Krystal} Before skipping over this recipe (because we all know meatloafs get a bad rap), forget what you think a meatloaf might taste like an give this one a try! Instead of salty, pasty ketchup as your topping, Taste of Home uses oven-roasted tomatoes with a hint of red pepper for spice.
Wednesday :: Slow Cooker Brown Sugar Balsalmic Glazed Pork – The Recipe Critic
{Recipe Approved by Sally} If you don’t already have one slow cooker meal going per week, we highly recommend you get to know your Crock Pot with this recipe. It can be served as a sandwich or as an entree item with potatoes or rice on the side.
Thursday :: Egg Pie
{Recipe Approved by Amanda H.} What child doesn’t love breakfast for dinner? With extremely simple, common ingredients, this meal is perfect for even the pickiest of eaters.
Ingredients Needed:
4 Eggs
1/4 tsp. baking powder
1/4 tsp. pepper
1/2 cup milk or heavy cream
2 cups cooked sausage
1 cup of shredded cheddar cheese
1 cup chopped, roasted green chile (optional)
Frozen pie shell
Directions:
1) Preheat oven to 425 degrees.
2) Beat eggs, add pepper, baking powder, sausage, and cheese.
3) Pour into an unbaked pie shell and bake for 30-35 minutes.
4) Cover the pie crust while baking with crust cover (foil will also work) so they won’t burn.
5) Remove crust cover (or foil) the last five minutes for the crust to brown.
Friday :: Chicken Chili – What Becky Thinks
{An Original Recipe by Becky} Even though the weather is getting warmer, a good bowl of chili is always an easy one for mom to make, and this recipe takes chili to a whole new level with salsa verde and cilantro.
Saturday :: French Dip Sandwiches – The Flies Blend
{Recipe Approved by Stephanie F. – City Moms Blog Network Founder & Steph’s Menu Creator} This super juicy beef, melted cheese over oven broiled hoagie rolls is a meal you’ll make time and time again — you almost don’t even need a recipe!

{Recipe Approved by Sally} NOTE: Don’t let the “Christmas” title fool you! It’s completely acceptable to make this delicious treat all year long to help cure any sweet or salty tooth.
