An easy and healthy tortilla soup recipe.
Ingredients
- 2 large chicken breasts or 2-4 thighs, cooked and shredded (400 degrees for 40-50 min)
- 2 tbsp of olive oil
- 1 onion, diced
- 2-3 tsp minced garlic
- 2 zucchini cut into half moons
- 2 squash cut into half moons
- 4 cups chicken broth
- 1 15oz can of diced tomatoes
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp cayenne
- Salt and pepper to taste...important for final flavor
- Toppings: Avocado, shredded cheese, tortilla chips, diced onions

- Cook chicken breasts or thighs (see above). In a Dutch oven or large pot, sautee onions and garlic in olive oil for 3-5 minutes. Add zucchini and squash and sautee for 10-15 more minutes until tender. Add the rest of the ingredients and bring to a boil. Turn to low heat and simmer for 30 or more minutes. Add the cooked shredded chicken when it is done cooking. Add toppings.
